Palak paneer pulao is a wholesome meal. It is a very healthy recipe at the same time it is a delicious dish to relish. Here I have used leftover palak paneer gravy to make this pulav. Whole spices and vegetables give it a flavour as well as a texture while protein packed paneer adds to its taste. The same recipe can be followed even for leftover rice. Instead of leftover palak paneer gravy, fresh spinach puree can also be used.

- 5 cup boiled basmati rice
- 2 onion
- 1 capsicum
- 1 carrot
- 1/2 cup cauliflower florets
- 10 green beans
- 1/2 cup green peas
- 3 tbsp oil
- 1 bay leaf
- 1 inch cinnamon
- 4 cloves
- 2 cardamom
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1/2 teaspoon green chilli paste
- 1/4 teaspoon turmeric
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala
- to taste Salt
- 1 cup palak paneer gravy
- 200 gram paneer

Heat oil and add bay leaf, cinnamon, cloves and cardamom to it. Now add thinly sliced onion and saute it until light brown in colour. Now add ginger, garlic and green chilli paste to it and cook it for one minute. Now add all the chopped vegetables to it and mix it well. Add turmeric, red chilli powder, garam masala and salt to it and give it a good mix.
