Sprouts Farmers Market carries some of my favorite ingredients used in this stuffing, like frozen organic riced cauliflower, organic raisins (with no added oils or sugar), organic apricot preserves and gluten free bread!

If you haven't tried riced cauliflower before, it's a great alternative to rice if you can't have grains. It's also just simply delicious! My family uses it almost weekly to add to soups andstir frys.

Cauliflower is a great source of vitamin C, vitamin K, folate, pantothenic acidand vitamin B6. It's also a good source of choline, fiber, omega-3 fatty acids, manganese, phosphorusand biotin.

Riced cauliflower is a lovely side dish for any meal and it's also SO good packed in stuffing.

This stellar sweet and savory gluten free stuffing is deeply flavored and chock-full of vegetables and fruits! For an extra special, nourishing twist, it’s loaded with toasted riced cauliflower and filled with caramelized onions, herby aromatics and lots of delicious fruit.

Ingredients

  • 2 gluten free baguettes, cut or torn into 1” cubes
  • 12 oz frozen Sprouts Brand organic riced cauliflower
  • 1 yellow onion, diced
  • 4 fresh garlic cloves, finely minced or grated
  • 5 celery stalks with leaves, thinly sliced
  • 2 tablespoon chopped fresh sage leaves
  • 1 tablespoon minced fresh thyme leaves
  • 2 teaspoon minced fresh Italian parsley
  • 2 apples or pears, cored, peeled and diced
  • ½ cup fresh cranberries or dried cranberries
  • ½ cup Sprouts brand organic raisins
  • ½ cup chopped dried apricots
  • 2 tablespoon Sprouts Brand organic apricot preserves
  • 1 teaspoon sea salt
  • ½ cup + 2 tablespoon organic butter or ghee, melted – divided
  • 1 ¾ cup organic chicken broth

Instructions

  1. If the gluten bread needs to be baked first, bake according to the package instructions.
  2. Preheat the oven to 375° Cut or tear bread into 1” pieces and spread out on a baking sheet. Bake in a preheated oven for about 15 minutes, just until dried out like a crouton. Set aside and let cool.
  3. While the bread is drying out in the oven, add 2 tablespoons healthy fat of choice to a large sauté pan over medium heat. Add the riced cauliflower and cook for about 3 minutes stirring constantly. Add the onion, garlic and ½ teaspoon of sea salt, stirring occasionally for about 10 minutes, until the onions and cauliflower start to become slightly golden brown around the edges. Add the celery, sage, thyme and parsley, stirring occasionally for about 3 minutes. Remove from heat.
  4. In a verylarge mixing bowl, add bread pieces, vegetable mixture, fresh fruit and dried fruit, apricot preserves, ½ teaspoon sea salt, ½ cup melted butter or ghee andbroth. Gently stir to combine. Pour stuffing mixture into a9x13 casserole dishand bake in a 375° F preheated oven for about 25-30 minutes, or until the bread has become light golden brown on the top and the stuffing is heated through. Allow to rest for 5-10 minutes before serving.

Notes

  • Store stuffing in an air-tight container for up to 3 days in the refrigerator. Reheat the stuffing in the oven on a low/warming temperature just until heated through.
  • If you prefer to change up the fruit, any of the dried fruit can easily be substituted with other dried fruits like figs, cherries, etc
