Gluten-Free Blintz Casserole each and every bite will have your family asking for more. All in all, each and every bite will have you craving more. In any case, it is the perfect addition to any morning breakfast, brunch, or buffet table. Not only can this be served for breakfast but it can also be served as a dessert. Furthermore, top the casserole with a fruit compote or fresh fruit to elevate it. Blintzes are one of my favorite breakfast items. However, making individual blintzes take time. Blintzes are similar to a filled crepe. Blintz Casserole is a sweet and tart creamy filling sandwiched between two layers of Blintz crepe batter. Top with whipped cream and berries will make it perfect for the 4th of July brunch.
Gluten-Free Blintz Casserole Notes:
What are Blintzes? Blintzes are semi-cooked crepes with a delicious creamy filling. Blintzes come from central Europe and have been around since the 1800s. However, Gluten-Free Blintz Casserole begins with a layer of souffle crepe-like batter that is lightly baked. Next, it is followed by a layer of sweetened ricotta cheese and cream cheese. In conclusion, it is topped with the final layer of the blintz batter. Afterward, simply top the blintz squares with fresh fruit, compote, or some sort of topping.
Consequently, this recipe has Cassava Flour and Monk Fruit Sweetener. If you have never used these ingredients I highly recommend reading my Cassava Flour Information and Monk Fruit Sweetener Information blog posts.
Breakfast Ideas:
Often times I add Turkey Maple Breakfast Sausages, Gluten-Free Ham Bacon Quiche, fresh fruit, and an array of fruit syrups and toppings. As a matter of fact, this would be the perfect buffet for Easter, Mother’s Day, Father’s Day, or even the Fourth of July. For the Fourth Of July, I highly suggest serving with blueberry fruit syrup, strawberry fruit syrup, and sour cream. Try these blintzes with my Fresh Strawberry Sauce.
Furthermore, my personal favorite vanilla is Madagascar Bourbon Vanilla. To summarize, it has a little sweeter and with slight bourbon notes. Nonetheless, I prefer it over Mexican or Tahitian Vanilla. Nevertheless, if you prefer another vanilla then use it.
Subsequently, Cassava flour, Monk Fruit Sweetener, Almond Flour, Vanilla, and Baking Powder.

Gluten-Free Blintz Casserole
Ingredients:
- 1 1/4cup milk
- 1/3 cup cream
- 3 tbsp sour cream
- 1 tsp pure vanilla
- 3 tbsp vanilla powdered monk fruit sweetener
- 2/3 cup almond flour
- 2/3 cup cassava flour
- 4 eggs
- 1 tbsp baking powder
- 2 tbsp avocado oil or butter
Gluten-Free Blintz Casserole Directions:
First, preheat the oven to 350 F. Secondly, place all the ingredients into a blender and blend. If prepping this recipe the night before just omit the baking powder and add in the morning before baking. Needless to say, don’t forget to add the baking powder. Grease a baking dish on the bottom and sides. Pour in half of the batter into a 9 x 13-inch baking dish. Bake for 10 minutes or until the bottom is set.
Blintz Filling:
- 24 oz ricotta cheese
- 8 oz pkg room temperature cream cheese
- 1 egg
- 1 tsp vanilla
- 3 tsp lemon zest
- 2 tbsp fresh lemon juice
- 4 tbsp triple sec (optional)
- 1/4 cup monk fruit sweetener
- 1/4 cup maple sugar
Directions:
While the bottom layer of the blintz is cooking prep the filling. Stir all the ingredients together until well combined.
After 10 minutes remove the first layer of semi-cooked blintz from the oven. Finally, add the filling below by carefully spooning it over the top layer. Thus, use a spoon turned upside down so as not to dent the first layer of blintzes. Lastly, using a spoon turned upside down, pour the remaining blintz batter onto the spoon and let it lightly drizzle over the cheese filling making sure to cover over all of the cheese sauce. Return the casserole dish to the oven and bake for 30-40 minutes or until the top is lightly browned. Remove and allow to cool for 5- 10 minutes. Serve with Fresh Fruit or other Syrups.
