Air fryer potato stacks recipe – an easy 5-ingredient side that’s perfect with almost anything. Of course, they’re gluten-free, vegan and low FODMAP too.

Air fryer potato stacks recipe, anyone? These might be my favourite potato side that I’ve made in the air fryer so far. They’re super crisp and crunchy on the outside, but fluffy in the middle and seasoned to perfection.

I post a lot of recipes over on Instagram and TikTok, but sadly, they don’t all make it to the blog as I’m often lacking in time to photograph and write them all up! (sorry)

However, when a simple potato recipe like this gets over 1.5 million views on TikTok alone… I think it probably deserves a place here on the blog, don’t you think?

Well, to be honest, even without the numbers, this recipe absolutely needs to be made by you! Not only does it work when served next to anything, it’s also incredibly budget friendly since it basically just uses potatoes, a little oil and some herbs and spices.

Here’s everything you’ll need to make them:

  • Potatoes: Yukon gold, maris piper or russet potatoes work well here, but of course, you’re welcome to just use whatever potatoes you can find.
  • Garlic-infused oil: Don’t expect crispy results in the air fryer without adding oil! This type of oil has been naturally infused with garlic-flavour, meaning you need less ingredients (and it’s low FODMAP too if it doesn’t have actual pieces of garlic in it).
  • Smoked paprika: This works so well with potatoes (you’ll often find it in curly fries!) and dried herbs, which is exactly the combo I’ve gone for here.
  • Dried oregano and rosemary: Any dried herbs will work here, but these are my two of choice.
  • Salt and pepper: I don’t count these in the 5 ingredients as they’re essentially optional and can also be added after they’re done, if you fancy.

So, what do they taste like? Each stack is super crispy and golden on the outside, seasoned with a smoky paprika, herby spice blend.

Inside, each stack is surprisingly fluffy in the middle, offering a welcome contrast to that crunchy exterior. It’s hard to call these a side when they’re this good!

Enjoy them with gluten-free air-fried chicken or any meals where you might have also have mash, fries or any potato side. We even enjoyed ours alongside a chicken curry instead of rice because… why not?

This recipe is naturally gluten-free!

Which potatoes should I use?

Yukon gold, maris piper or russet potatoes are perfect for this recipe. But of course, any potato will work, these are just my preference!

Air fryer potato stacks recipe: Tips for the perfect stacks every time

  1. Soaking the potato slices makes more difference than you think. And make sure you dry them really well after. This makes the stacks super crispy when they’re done!
  2. A clean tea towel works well instead of kitchen paper to dry out the potato slices too… and means less waste!
  3. Make sure you have co*cktail sticks ready. These stacks are quite tall, so use these to keep them standing whilst cooking.
  4. Covering the stacks with foil is key to the perfect results. If you don’t cover them, they’ll be burnt on the outside before the middle is nice and fluffy!
  5. Remember: all air fryers differ, so cooking time may slightly vary. But once they’re crisp on the outside and you can poke a fork through them easily, they’re done!

Ingredients

  • 700 g potatoes
  • 3 tbsp garlic-infused oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • pinch salt and pepper

Instructions

  • Peel and slice the potatoes thinly (I used a mandoline vegetable slicer to create lots of 3mm slices) and place in cold water for 15-30 minutes. This helps to get even crispier stacks later on.

  • Drain and dry the potato slices thoroughly by laying them on kitchen paper or a clean tea towel.

  • In a large mixing bowl, toss the potato slices in the oil and seasoning.

  • Layer the potatoes in stacks and secure together with a co*cktail stick.

  • Place the potato stacks in some foil and cover them to start with. Place in the air fryer for about 15 minutes at 180C. After 15 minutes, open up the foil and allow to cook for a further 15-20 minutes so they can colour and crisp up on top.

  • Serve with dips or alongside your favourite dinners.
